I have been a tester for more than 18 years and a test manager in Automotive industry. In the end, testing is the same. It depends what results do you need to monitor and what fast solutions you need.

The best solution would be try -error approach. Basically constant deployments with resolved problems and request problems (or sugestions for improving) in live environment. Set Up Trello or any kind of tiketing system that helps you also in visualizing the existing problems and also the resolved ones.
Feedback should be very specific: 1 problem at a time. Otherwise it would be a mixture of problems and will be very hard to maintain.
